400g rhubarb (cut into chunks)
2 tbsp sweetener
2 tsp ground ginger
1 orange (zest and juice)
150g fat free fromage frais
400g low fat custard
Preheat oven to 180C/fan 160C/gas 4.
Put rhubarb into ovenproof dish in a single layer. Sprinkle over the sweetener, ginger, orange zest and juice, and stir well.
Cover with foil and bake for 25-30 mins. Allow to cool, then chill for 2-3 hours.
Put the fromage frais and half the chilled rhubarb in a bowl and mix well.
Divide between 4 dessert glasses then top each with custard. Top with remaining rhubarb and serve.
