150g dried rigatoni
200g chopped veggie bacon rashers
1 red onion, sliced
2 garlic cloves
1 tsp dried chilli flakes
1 large courgette, coarsely grated
2 red pepper, thinly sliced
2 yellow pepper, thinly sliced
6 large eggs
2 level tbsp veggie parmesan
Cook pasta according to pack instructions. Drain and set aside.
Spray a non-stick pan and place over medium heat. Fry bacon strips and onion for 5 mins.
Add garlic, chilli and courgette and stir fry for 5 mins.
Add pasta and peppers, and stir fry for 2 mins.
Lightly beat eggs, season and pour over the pasta. Cook for 8-10 mins over medium heat.
Preheat grill to medium.
Sprinkle parmesan over the top and grill for 4-5 mins.
Serve with salad.
