CARIBBEAN ‘GAMMON’ WITH SWEET POTATO FRIES

4 sweet potatoes (cut into chips)

4 quorn gammon steaks

1 lime

l tbsp ketchup

1/4 tsp ground allspice

Salt and pepper

1 pineapple (cut into chunks)

150ml pineapple juice

1 red onion (chopped)

1/2 cucumber (diced)

 

Preheat oven to 200C/fan 180C/gas 6.

Spray sweet potato chips with low-cal spray, toss to coat, then spread on baking tray. Season and cook for 35-40 mins, turning halfway.

Put the gammon in a dish. Mix the juice of the lime, ketchup, and allspice with freshly ground pepper, then rub all over the gammon and leave to marinate.

Mix the pineapple, cucumber and red onion and leave to stand.

Spray a griddle pan with low-cal spray and place over medium-high heat. Cook the gammon for five mins, turning halfway.

Add pineapple juice and allow to bubble for 2 mins until sticky. Divide gammon and sauce between plates. Serve with chips, salad and lime wedges.
